Served as a series of thoughtfully composed small plates, the menu allows you to savour every course at your own pace. From the toddy-cured Seer Fish Gravlax of Beruwala and the lagoon-fresh Prawn Tartare of Negombo, to Mannar’s traditional Odiyal Kool and Ambalangoda’s preserved Ambul Thiyal on crisp mini hopper, each dish reflects its home region’s character. Jaffna’s spiced Crab Curry, Passikudah’s refreshing King Coconut & Kaffir Lime Sorbet, Hambantota’s salt-crusted snapper, and Puttalam’s tea-poached pear dessert complete the journey, showcasing Sri Lanka’s diverse coastal flavours and culinary artistry in every bite.
